TAHINI, CHOCOLATE CHIPS AND OATMEAL COOKIES

Ingredients:

  • 2 cups oatmeal
  • ½ cup whole wheat flour
  • ½ cup flour
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup 100% whole sesame Baracke tahini
  • 4 tablespoons unsalted, cold butter, sliced to dices
  • ⅔ cup sugar
  • ⅔ cup brown sugar
  • 1 large egg
  • 1 eggs’ white
  • 1 tablespoon vanilla extract
  • 1 cup dark chocolate chips
  • ½ cup chopped walnuts

Insructions:

Preheat oven to 350 degrees celsius.

  • In a medium size bowl- grind together oatmeal, whole wheat flour, flour, cinnamon, baking soda and salt.
  • In a large bowl- mix tahini and butter using electric mixer, until become paste. Add both types of sugar, keep mixing until mixture is still a bit granulated.
  • Whisk egg, eggs’ white and vanilla extract. Using wooden spoon add oatmeal mixture.
  • Add chocolate chips and walnuts.
  • With moist hands, make balls out of mixture and place in a baking pan.
  • Space the balls at least 2 cm apart from each other.
  • Bake cookies for 16 minutes. Cool down before serving.
